Cheese Knives

All the cheese knives are made of pure 18-10 stainless steel and have the Inox label. 18 is for the 18% chrome and 10 is for the 10% nickel content. As for the Inox label, it akin to the Sterling label for silver attesting to the highest production standards. In essence stainless steel need only have a 10.5% chrome content to be labeled stainless and no nickel. Your cafeteria brands would be good examples of that. You get different blends in the market with 18-10 being considered the top of the line which is the preferred choice as a replacement for silver since the high nickel content gives that elegant luster that competes with the look of silver.
